POKOTABI / Matoi
新橋 纏
Tucked deep down an alley in Shimbashi, Matoi delivers characterful ramen dishes such as dried-squid chicken paitan and clean, clear hiraoko niboshi broth.
01 / ABOUT THE PLACE
A rich, toasted aroma of squid rises the moment the bowl reaches the counter. The main draw for many at Matoi is the ika-boshi tori paitan soba (dried-squid chicken paitan noodle soup), a style seldom encountered elsewhere. Velvety chicken paitan softens the punchy depth of dried squid and squid liver, yielding a layered broth with lingering richness. Crisp, straight noodles pick up the broth cleanly, while tender chicken chashu and squid tentacles underscore the seafood theme.
Alongside the idiosyncratic squid broth, the hiraoko niboshi soba is the natural choice for those who prefer clarity. Drawing on dried sardines without harsh bitterness or fishiness, the soup leaves an elegant, clean finish that suits the thin noodles well. Options span thick chicken tsukemen with pronounced seafood notes to side orders like aburi chashu spring onion rice, making it easy to tailor the meal to your mood.
The shop is tucked deep down a narrow passageway between buildings in Shimbashi 3-chome, marked by a standing signboard out on the street. Inside is a compact space arranged mainly around counter seating. Payment is cash only, and reservations are not accepted. Slipping down the alley feels a bit like uncovering a hideaway, rewarded by stock crafted with uncommon depth.
